What is the difference between an ammonia evaporator for cooling and one for freezing?

The main difference is the operating condition. An ammonia evaporator for cooling is designed for medium or higher low-temperature duties, where the goal is to chill a room, process area, or product without necessarily freezing it. An ammonia evaporator for freezing is built for much lower evaporating temperatures and harsher frost conditions, because it must remove heat faster and pull the product temperature down below its freezing point.

In practical design terms, a freezing evaporator usually needs wider fin spacing, because frost builds up much faster at lower temperatures. If the fins are too close, airflow can be blocked quickly. A cooling evaporator can often use tighter fin spacing because frost formation is less severe. Freezing models also tend to require more careful attention to air throw, airflow volume, and defrost design, since stable performance between defrost cycles is much more critical.

The defrost requirement is another big difference. A cooling evaporator may run with lighter frost load and simpler defrost intervals, while a freezing evaporator usually needs a stronger defrost arrangement, such as hot gas defrost or water defrost, especially in industrial ammonia systems.

There is also a difference in application. Cooling evaporators are common in chill rooms, processing rooms, and refrigerated storage above freezing or moderately below it. Freezing evaporators are used in blast freezers, IQF tunnels, spiral freezers, and deep-freeze cold stores, where the temperature is much lower and the heat load is more demanding.

So, in simple terms, a cooling evaporator is designed to keep products cold, while a freezing evaporator is designed to freeze products quickly and reliably under heavier frost and lower-temperature conditions.
