Principle of Operation of Quick Freezing Evaporator


Quick-freezing evaporator is a key component used in quick-freezing equipment, and its operation principle is as follows:


Cooling Evaporation: In quick-freezing equipment, the quick-freezing evaporator usually absorbs heat from the surface of the product by evaporation, and freezes the product quickly. The refrigerant (e.g., ammonia or Freon) in the quick-freeze evaporator is in a low-temperature, low-pressure state, and absorbs heat from the product surface by evaporation to rapidly cool the product to the desired freezing temperature.


Heat Transfer: The refrigerant circulates inside the evaporator and when it comes into contact with the product surface, the refrigerant evaporates and absorbs heat, causing the product temperature to drop rapidly. Subsequently, the refrigerant is compressed into a high-pressure, high-temperature state, releasing the absorbed heat and circulating back to the evaporator to complete the entire cooling cycle.


Heat Transfer Efficiency: Quick-freeze evaporators are usually designed as spirals or flat plates with large surface area to increase the contact area between the product and the refrigerant and improve the heat transfer efficiency, thus realizing quick freezing.
