The single most critical rule for banana ripening: small air-to-coil temperature difference (ΔT). Higher evaporating temperature = less moisture condensed on fins = stable 90%–95% RH, minimal banana weight loss & peel shrivel.

1. Standard Evaporating Temperature (Te) Range

Stage 1: Long-term green banana storage (13–14°C room)

Design evaporating temp: +6°C ~ +8°C (7°C industry standard)

Air-on coil: 13–14°C, Air-off coil: 11.5–13°C

Coil ΔT = 5–7K (ideal for high humidity)

Stage 2: Controlled ethylene ripening cycle (16–19°C room)

Design evaporating temp: +10°C ~ +12°C

Coil ΔT kept ≤6K to avoid dehumidification

Prevents rapid moisture loss during active fruit respiration

2. Why 7°C Te is the universal benchmark for banana ripening rooms

Major European & Chinese ripening cooler manufacturers standardize 7°C evaporating temperature for bulk green banana storage rooms (6–30 pallet capacity)

ΔT of ~6°C between room air and coil surface restricts heavy condensation; maintains RH above 90% without extra large humidifiers

Avoids coil heavy frosting, extends defrost intervals, reduces defrost frequency

3. Refrigerant Practical Suction Temperatures (Field Operation)

For common refrigerants (R404A / R448A / R452A):

Te = 7°C → Suction gas superheat controlled at 3–5K (low superheat via EEV)

Suction line running temp: 10–12°C (no frost on suction pipe)

Never run evaporating temp below +5°C in banana rooms:

Larger ΔT dries air drastically

Coil frosts fast, frequent defrost disturbs ripening rhythm

Risk of local air temp dropping below 12°C → banana chilling injury (flesh browning)

4. Operation & Troubleshooting Tips Related to Evap Temp

If room RH drops below 88%:

Raise evaporating temperature by 1–2°C via electronic expansion valve (EEV) adjustment

Reduce coil ΔT to cut air dehumidification

If coil frosts quickly:

Te set too low; increase saturation temperature

Check EEV over-feeding / under-feeding superheat

Defrost matching high Te design:

Hot gas defrost is preferred over electric defrost for 6–8°C evaporating temp systems, as electric heaters cause sharp RH drop during thawing.
