Freeze Drying Machines:

1. Freezing Stage: In freeze drying, the first step is to freeze the food product. This is usually done by placing the product on trays or shelves within a freeze drying chamber. The temperature is lowered significantly to freeze the product.


2. Primary Drying: Once frozen, the food product enters the primary drying phase. Here, an evaporator is employed to create a vacuum within the chamber. This low-pressure environment allows ice to transition directly from a solid to a gaseous state (sublimation) without passing through the liquid phase. The evaporator maintains a low temperature in the chamber to facilitate sublimation.


3. Secondary Drying: After most of the moisture has been removed in the primary drying phase, the secondary drying phase begins. The evaporator continues to maintain a low pressure and temperature while removing any remaining moisture from the food product.


The evaporator in a freeze drying machine plays a critical role in maintaining the necessary low pressure and temperature conditions for sublimation to occur. It ensures that the frozen moisture in the food product is converted directly into vapor, leaving behind a dried, shelf-stable product.


IQF Tunnels:

Individual Quick Freezing (IQF) is a method of rapidly freezing food products individually, preventing the formation of large ice crystals and preserving the product's quality. IQF tunnels are used for this purpose, and evaporators are essential components within these tunnels:


1. Product Conveyor: In an IQF tunnel, food products are placed on a conveyor belt, which carries them through the tunnel. The products are spaced apart to ensure individual freezing.


2. Evaporator System: The evaporator system within the IQF tunnel generates cold air at very low temperatures. This cold air is forced into the tunnel to create the rapid freezing environment. The evaporator maintains a consistent temperature throughout the tunnel to ensure uniform freezing of each product.


3. Air Circulation: Fans are used to circulate the cold air within the IQF tunnel. The evaporator continuously chills the air, and this chilled air is circulated around the food products to freeze them rapidly. The airflow is carefully controlled to prevent product dehydration or damage.


The evaporator in an IQF tunnel is responsible for producing and maintaining the extremely low temperatures necessary for quick freezing while ensuring the even freezing of individual food products. This rapid freezing method helps preserve the product's texture, flavor, and nutritional value.


In both freeze drying machines and IQF tunnels, the evaporator is a critical component that creates and maintains the specific conditions required for the desired food preservation process.
